Linux Mail Server Setup and Howto Guide

I'd like some advice on the following solution I'm setting up. I want to setup an external mail server to which mail for x number of domains will be sent to. This mail server will be running Postfix, Mailscanner, Spamassassin, ClamAV and few other bits and bobs.

The mail server will filter out high scoring SPAM/Junk but not perform checks on receipient email addresses for validity(well at least not yet). Email that passes through will then get forwarded onto the server hosting these domains.

Any issues with such a setup?
How can mail for the x number of domains be forwarded on after cleaning/filtering via Postfix?

Any advice much appreciated!
